Sounds like you're concerned about the ph level of the soil (?)
It's really best to take a sample from where you want to plant & have it tested to see if it's suitable for growing peaches. Otherwise just stay out of the old trees drip line.
I agree with the first answer, pines are shallow rooted (relatively) & they won't come back even if you just cut them down vs digging them out. Clean up the debris from them so you don't leave any of their seeds/pine cones.
